Charred Chipotle Broccoli Tacos

The Swanky household unfortunately has two extremes for weeknight dinner options. 1) Scour the internet for a perfect recipe, buy every ingredient from the market down the street, and make a big mess in the kitchen. This almost always ends in delicious meals, but isn’t the most practical for everyday eating. The 2) option is, without fail, take-out Thai food.

I’m very aware I need to incorporate more 1.5s into my life. You know, meals from neither extreme. Dinner you can throw together from whatever is in the fridge, without spending time searching for a recipe or doing a million dishes — ideally, food good enough to encourage others to make too. (And when we get down to it, I have other 1.5s I should incorporate into my life more: just doing yoga on my own without needing to go to a class or following a podcast, or being content to mosey on down the street behind a hand-in-hand couple without internally blasting them for taking up SO MUCH SIDEWALK.)

I mean, that’s basically why I started this blog in the first place. I needed a space to consolidate recipes, experiments, and ideas from bookmarks on multiple devices, forever-opened tabs on my computer, and recipes torn from magazines. (And, uh, not to rant about slow moving pedestrians.) This is my little online corner of 1.5s and memory joggers and inspiration, regardless of what foodgawker thinks.

Tacos fill that “1.5” category pretty darn well, and as Daniel craves gringo tacos like his mom made in the ‘80s at least once a month, they make a frequent appearance. He refuses to stray from his beloved ground beef and taco seasoning packet (although the meat this time was locally raised and purchased at the farmers market – small win?). I’ve become pretty good at the art of the non-meat taco. This chipotle broccoli is one of my favorite fillings, with a smoky spicy kicky punch. Also it’s dummy-proof easy: a cutting board, one roasting pan, and 20 minutes later, you’ve got yourself seriously delicious homemade dinner (and don’t have to bat an eyelash over the embarrassing amount of plastic take-out dishes in your recycling this week).

Charred Chipotle Broccoli Tacos

Serves two (or one dinner and adequate leftovers*)

For the filling:
1 head broccoli
2 small sweet yellow or red peppers, sliced into rings (or 1/2 a red or yellow bell pepper, sliced into bite sized pieces)
1 scallion, finely sliced
2 chiles in adobo (from a can*)
1 teaspoon ground cumin
Juice from half a lime
1 tablespoon olive oil
s&p

Non-negotiables:
Tortillas (I prefer flour but your call)
Shredded cheese
Diced tomatoes

Optional Toppings:
Cilantro
Lime
Sliced black olives
Shredded iceberg lettuce
Sour cream
Salsa or hot sauce
Avocado (if that’s your kinda thang)

Preheat oven to 400 degrees Fahrenheit.

Prep broccoli: Cut florets into bite-sized pieces. Peel the stalk to remove toughest part. Cut stalk into thin slices.

Make filling: Combine all ingredients on roasting tray and mix well. Roast for 18 minutes, stirring once, until florets are charred and stalks are tender. Let cool a bit.

Prepare tortillas by placing them directly on the open flame of a gas burner, about 5 seconds per side. (Or char in a hot dry pan.) Pile on broccoli, cheese, tomatoes, and whatever else your heart desires. Serve with rice and beans.

*two notes:

  • If you want to mix it up the next day, the filling was pretty dreamy stir-fried with leftover quinoa and spicy BBQ sauce, with a fried egg on top.
  • I love chiles in adobo sauce. They’re smoky and spicy and add a burst of flavor to just about anything. Once you open a jar, you can keep the rest in a sealed container in the fridge for a very long time and use one pepper at a time as necessary.

Hot Honey Pizza with Roasted Broccoli and Red Onion

A damn good pizza idea:

Besides the usual dough, sauce, and cheese galore, add broccoli and red onions prepared as you would for roasting them (coated in olive oil, plus s&p). Broccoli florets should be quite small, and onions quite thin, to allow for a short cooking time.

THEN, make the best pizza topping in the world (discovery thanks to Paulie Gee’s…aka the debatable best pizza in NYC): HOT HONEY. You can be all fancy and buy the official version (which we did at the recent Greenpointers Holiday Market, but, as per my rules, we Cannot Touch until Christmakkuh is celebrated…) OR make your own. Simply combine 3 parts honey to 2 parts hot sauce (unless your hot sauce is ridiculously hot) and mix well. Drizzle over pizza before popping into your oven (at the hottest possible temp).

Pizza is done when cheese melts sufficiently, broccoli is charred but still crunchy, and the edges begin to brown, about 12 minutes.

We strayed a bit from this basic model by trashing our pizzas up with black olives, yellow peppers, leftover mushrooms (me), prosciutto (him), and of course fresh basil post-oven. None of this was at all necessary, though, and I recommend giving the broccoli-red onion-hot honey combo a chance before letting your fridge leftovers make the rules.

Cheesy Bulgur Risotto with Broccoli and Tomatoes

Well-read books and paged-through magazines and background music and postcards and leftovers and clean laundry and dirty laundry and scarves and beer and nail polish and lost pennies.

This is home. Not a specific bed, or room, or apartment, or neighborhood.

A feeling, a net, a hug, a soup, a warm shower.

Changing all that isn’t easy. You can’t just plop a whole van’s worth of boxes and drawers into a different set of walls and expect it to transform.

This time I felt like the luckiest person in the world–moving into a place I already felt quite homey in, with a loving and fantastic person who had already prepared for this transition by buying extra storage boxes, reorganizing furniture, and, thankfully, not even asking me if I wanted to drive the van.

And here we are, a few days later, boxes still scattered and corners still cluttered but I look around while drinking a glass of wine from my vantage point on the couch and see the flowery potholders my mom bought me years ago hanging above the stove, and the elephant hooks I acquired in Nepal already overflowing with scarves, and our reordered dressers so they both fit snugly against the same wall, and I know I’m home.

And seriously what better way to celebrate that than a reimagining of a homey meal I had growing up: broccoli and cheesy rice casserole. I’m not the biggest fan of broccoli, but cheddar always makes it shine, and the fractal (romanesco) version at least provides visual excitement. I’m having a bulgur wheat moment, as it has recently appeared as a nutty-and-crunchy sub for rice in this risotto, and as a hearty wholesome addition to a salad with apple, radish, quick pickled red onions, cilantro, and poppy seeds. I wonder if in 20 years “risotto” will sound to my children like “casserole” sounds to my generation, but for now it’s a pretty good excuse to combine grains, cheese, and veggies into a quick and delicious one-pot dinner.

Cheesy Bulgur Risotto with Broccoli and Tomatoes

1 T olive oil
1 onion, chopped small
1 large (or 2 small) garlic cloves, minced
1-2 scallions, minced (white and light green parts only)
1 spicy green chile pepper, some seeds removed, chopped small (I used 1/2 a long hot but 1 jalapeno would work too)
1 cup coarse bulgur
1 cup vegetable broth
2 cups water, divided
1 large broccoli, cut into florets (I used some romanesco) (and took a lot of pictures of it)
1 tomato, roughly chopped
½ cup sharp cheddar cheese, shredded
small handful coarsely chopped parsley
s&p to taste

In a medium-to-large pot, heat olive oil over medium-high heat. Add chopped onion, scallion, garlic, and spicy pepper. Heat until soft, translucent, and smelling good, about 8 minutes.

Lower heat to medium and add bulgur. Toast, stirring constantly, about 1 minute. Then, add broth, 1 cup water, and big pinch of salt. Turn heat to high until it boils, then cover and turn heat to low.

Simmer for 10 min. At this point, most of the liquid should be absorbed. Add 1 more cup water (or broth) and broccoli florets. Cover again. 5 minutes later, broccoli should have started turning bright green. Add your chopped tomato and all its juices. If necessary, add more water at this point too. Cover, but leave lid open a crack.

Risotto should be done about 5 minutes later–the tomatoes will be disintegrated, the bulgur chewy, the brocolli cooked through but still crunchy. Add cheddar, parsley, and s&p and serve immediately.
